Opened in Denver in 1993 and now based in Newport Beach, California, the chain helped create the fast-casual category that sits between fast food and full-service dining. It runs almost entirely company-owned restaurants rather than franchises, which keeps quality and profit in-house and gives management tight control over its supply chain and its Food with Integrity sourcing pitch. The narrow menu lets kitchens move fast, and a second make-line dedicated to app and delivery orders has pushed digital to a large share of sales. New-store openings and same-store traffic drive the stock, while food-safety reputation, ingredient costs and labor remain the things that can bruise it.
